The other day I surprised my girlfriend with a Thai dinner in the garden and I just had to share with you this super tasty salad. Make this Thai cucumber salad with some steamed mussels with lemongrass and basil and you have the perfect recipe for a romantic night! This dish plays with your senses and helps you spice things up at home.
Place 1 cup of unsalted almonds in a preheated oven 150º-160º for about 10 minutes until slightly roasted. After 10 minutes remove the almonds and grind into a powder.
Peel the cucumbers and cut the cucumbers in half lengthwise. Remove the seeds and cut the cucumber in slices.
Mix vinegar, 1 Tbsp of argan oil and sugar in a small bowl and stir until the sugar is dissolved. Mix the dressing with the cucumbers, chilli sauce, onion and coriander. Marinate the salad for 45 minutes.
Add 1 Tbsp of argan oil in a skillet and fry garlic and chili peppers for 2-3 minutes.
Mix the salad with the peanuts, fried garlic and chili peppers, 2 Tbsp of almond powder, garlic and fish sauce.
