Preparation time: 20 min; Marinate time: 60 min
- 1/5 cup pine nuts
- 2 cups fresh basil
- 2 cloves minced garlic
- 4 Tbsp grated Parmesan cheese
- 4 Tbsp of lemon juice
- 4 Tbsp argan oil
- 3 Tbsp of pistachio oil
- 2 Tbsp of olive oil
- 1/2 small chilli pepper without seeds
1/3 Tsp salt and 1/3 Tsp black pepper
- Roast the pine nuts in the oven (preheated at 200º) for 5 minutes.
- Mix everything together in a hand food grinder except oils and lemon juice.
Once everything is mixed well, drizzle with lemon juice and oils. Mix until well blended and let the pesto marinate 60 minutes or longer.
You can keep the pesto in the refrigerator for 2-3 days. Serve on pasta with a glass of champagne or wine and enjoy!
