Moroccan Chickpea and Carrot Salad Recipe

The other day I asked in our newsletter what food you would all would like to see more and Jo B. emailed me Moroccan recipes. Straight away in the evening I put hands to deck and a couple of hours later this delicious salad was one of my creations. Thanks Jo for the inspiration, because it was unforgettably good!

Dressing Ingredients
  • 2 Tbsp of olive oil
  • 2 Tbsp of argan oil
  • 1 Tsp lemon zest
  • 3 Tbsp lemon juice
  • 4 Tbsp of orange juice
  • 1,5 Tbsp honey
  • 1 small Tsp of salt
  • 1/2 Tsp ground ginger
  • 1/2 Tsp of Cinnamon
  • 1/4 Tsp ground coriander
  • 1/4 Tsp cayenne pepper
  • 1 Tsp ground cumin

Moroccan Carrot and Chickpea Salad Recipe

Salad Ingredients
  • 450 gr of carrots
  • 4 Tbsp of currants
  • 1 cup of unsalted almonds
  • 1/2 cup chopped fresh mint and cilantro
  • 1 can chickpeas
  • 3 Tbsp minced shallots
  • 1 garlic clove

Moroccan Carrot and Chickpea Salad - Goachi Recipe

  • Place almonds in the oven for 10 minutes at 150º. Remove and grind toasted almonds to a powder.
  • Whisk in a large bowl together all of the ingredients for the dressing.
  • Add all the salad ingredients, cover with the dressing and toss well. Cover the bowl and marinate in the refrigerator for a few hours.
  • Garnish with the chopped herbs and ready to serve!
