The other day I asked in our newsletter what food you would all would like to see more and Jo B. emailed me Moroccan recipes. Straight away in the evening I put hands to deck and a couple of hours later this delicious salad was one of my creations. Thanks Jo for the inspiration, because it was unforgettably good!
Place almonds in the oven for 10 minutes at 150º. Remove and grind toasted almonds to a powder.
Whisk in a large bowl together all of the ingredients for the dressing.
Add all the salad ingredients, cover with the dressing and toss well. Cover the bowl and marinate in the refrigerator for a few hours.
Garnish with the chopped herbs and ready to serve!
